A healthy snack your little ones will LOVE


Homemade Granola Bars

This is super easy and my kids absolutely LOVE them.  Adjust quantities as desired; if you like more peanut butter, add it. Want more raisins or chocolate chips? Throw them in!  You really can't go wrong with these! Enjoy them! :)


Ingredients

  • 2 cups oats
  • 3/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 3/4 cup raisins or other dried fruit (optional)
  • 1/2 cup honey
  • 1 egg, beaten
  • 1/2 cup vegetable oil OR applesauce (I make mine with applesauce)
  • 1 mashed ripe banana
  • 1/2 cup peanut or almond butter
  • 1/2 cup mini chocolate chips (optional - my kids love them!)

Directions

  1. Preheat the oven to 350 degrees F. Generously grease a 9x13 inch baking pan.
  2. In a large bowl, mix together the oats, brown sugar, cinnamon, flour and raisins/fruit. Make a well in the center and pour in the honey, egg, oil/applesauce; mix in the banana and nut butter. Mix well and fold in the chocolate chips. Pat the mixture evenly into the prepared pan.
  3. Bake for 30 minutes in the preheated oven until the bars begin to turn golden at the edges. Cool for 5 minutes; cut into bars while still warm. If you allow the bars to cool completely, they'll be too hard to cut.
  4. Store in the refrigerator in an air-tight container.
